Steamed Silken Tofu
Quick and simple side dish or accompaniment. Serve with steamed rice. For hot days, you can consider serving the tofu without steaming it.
Silken Tofu recipe
Ingredients
Birds eye chilli: 1 - 2, sliced diagonally (use your discretion on your heat tolerance)
Spring onion: 3, sliced diagonally
Ginger: 1 inch knob, julienne
Silken tofu: 300g pack
Sichuan salt:
Sichuan peppers: 1 tablespoon
Salt: 1 tablespoon
Dressing:
Soy sauce: 2 tablespoons
Sugar, white: 1 teaspoon
Vinegar, white: 1 teaspoon
Sesame oil: 1 teaspoon
Peanut oil: 1 teaspoon
Method
Steam tofu until heated all the way through.
Mix the dressing ingredients together. Add 1-2 tablespoons of water if desired.
Grind Sichuan peppers and salt together in a mortar and pestle.
Assemble a few slices of spring onion on a plate and place the tofu on top. Top with more spring onion, ginger and chilli. Drizzle the dressing over the top.
Serve with the Sichuan salt and allow everyone to sprinkle as much or as little as they like.Â
