Prawn Open Sandwich
One of our family's favourite weekend lunches when we're a bit rushed. This definitely has a high reward to effort ratio. The key is to get good fresh prawns and bread.Â
Prawn Open Sandwich recipe
Ingredients
Prawn mixture
Prawns: 250g, shelled and deveined
Kewpie mayonnaise: 3 tablespoons
Lemon: 1/4, finely grated zest and juice
Herbs: Dill or chives, 2 tablespoons, chopped
Salt and pepper: To taste
To serve
Fresh bread
Lettuce leaves (e.g., rocket, spinach leaves, cos lettuce)
Method
Sear prawns on a skillet grill or frying pan until just cooked. Remove from heat and dice.
Add 1 tablespoon of lemon zest to a bowl. Add the juice of half a lemon, chopped herbs and mayonnaise.
Add cooked prawns to the mixture and add salt and pepper to taste.
Place prawn mixture on top of fresh bread and your choice of lettuce leaves.
