Oysters with mignonette hack
You can finely dice one or two shallots and freeze the majority. Each time you have oysters, you can take a teaspoon of the frozen shallots and add it to red wine vinegar. This makes oysters as an entree essentially ready as soon as you take it out of the fridge.
