A simple recipe that uses few ingredients. Prawns were a rare treat, and were often reserved for when we had visitors. Whilst alluringly simple, the dish relies on having fresh, juicy prawns. For best results, Mum recommends using raw banana prawns (peeled and deveined).

Prawns: 250g (ideally raw prawns, but cooked prawns work too)
Garlic: 1 small clove, minced
Chilli birds eye: 1 small chilli, chopped
Sugar, caster: 1/2 teaspoon
Soy sauce: 1 teaspoon

Method
If using raw prawns, fry until golden and almost cooked, then add garlic and chilli and fry for a minute longer or until fragrant.
Add sugar and cook for 30 seconds.Â
Add soy sauce, stir and cook for another minute.
Garnish with fresh coriander or spring onion. Serve immediately with fresh rice.
