One of the simplest sauces you can make. It elevates barbequed or poached chicken and other white meats.
This is one of the sauces that typically accompanies Hainanese Chicken Rice.

Ginger: ~30g (1 large knob or 2 medium sized knobs), finely grated
Spring onion: 2 stems, sliced
Salt: 1/4 teaspoon (table salt)
Grapeseed oil: 1/4 cup (60 ml), any neutral oil works well

Mix all ingredients together.
Ideally, let it sit for 10 minutes. The salt will draw out the moisture in the spring onion.
Serve with a white meat (chicken, pork or fish) and steamed rice.
