Ingredients
4 slices of thick-cut bread (white or wholemeal)
4 tbsp tomato paste
3 large eggs
1/2 cup diced vegetables (e.g., onion, capsicum, tomato, or zucchini)
2 rashers of bacon, cooked and crumbled (optional)
1 cup shredded cheese (cheddar, mozzarella, or a blend)
Salt and pepper, to taste
1 tsp olive oil or butter (for sautéing vegetables)
Optional garnish: chopped parsley or spring onion
Method
Prepare the Bread:
Preheat your oven to 180°C (350°F). Place the slices of bread on a baking tray lined with parchment paper.Spread the Base:
Spread a generous tablespoon of tomato paste evenly over each slice of bread.Cook the Vegetable Mixture:
