Fluffy Banana Oat Pancakes recipe
Ingredients
1½ cups rolled oats
3 eggs
2 ripe bananas
½ cup milk
½ teaspoon baking powder (optional, improves fluffiness)
Oil or butter for cooking
Method
Place oats in a blender and blitz until powdered. Add bananas, eggs, milk and baking powder and blend until smooth.
Allow batter to rest for 3–5 minutes, thickening slightly for better pancake texture.
Heat a lightly greased frying pan over medium heat.
Pour approximately two tablespoons of batter per pancake onto the pan, cooking until bubbles form on the surface.
Flip pancakes and cook until golden brown (another 1–2 minutes).
Serve immediately, topped with fresh berries, Greek yoghurt, maple syrup, or your favourite pancake toppings.
