Flatbread

Hot, fresh flatbread - well worth the effort if you have the time. Eat with slow cooked meats, salads and aioli.
Flatbread recipe
Ingredients
Pizza / bread dough: 1 cup
Plain flour: 1 1/2 cups
Yeast: 1 teaspoon
Sugar: 1/2 teaspoon
Olive oil: 2 tablespoons
Lukewarm water: 1 cup
Method
Combine water, sugar and yeast together. Set aside for 10 minutes until the yeast has activated the the water is frothy.
Combine the flour and salt. Combine with the water, a little at a time to create a slightly tacky dough.
Knead for 8 - 10 minutes until well combined and smooth.
Cover with olive oil, and set aside in a warm environment for at least an hour.
Separate into 12 balls, roll until smooth and cover with a damp cloth for 30 minutes.
Roll out into a thin disk, spay a little water and cook for a couple of minutes at 250C (or higher if possible). The flatbread should be soft and pliable.
