Egg Finger Sandwich
I don't know why, but I've always loved a good egg sandwich, even as a small boy. They would be a feature at various school events - you the know the type, where everyone has to bring a plate of something to share.
Egg Finger Sandwich recipe
Ingredients
Eggs: 3, ideally at room temperature
Lettuce (e.g., cos): 3 leaves, shredded. This should be about 1 cup
Kewpie Mayonnaise: 3 tablespoons
White bready, fresh: 4 - 6 slices
Salt and pepper to taste
Method
Boil eggs until just hard boiled. This typically takes ~7 minutes if the eggs are at room temperature and you heat them up with the water. Add another 1-2 minutes if starting from the fridge.
Peel eggs and place them in a bowl. Add the lettuce and mayonnaise and mash together. Add a good grind of black pepper and 1 - 2 decent pinches of salt.
Spread mixture onto 2 pieces of bread (if you want a lot of filling) or 3 if you want to spread the mixture out. Complete the sandwiches with another slice of bread on top. Cut off the crusts and cut into three fingers or as desired.
Note: If you wanted to make a curried varation, you can add one tablespoon of curry powder (e.g., Keen's Curry Powder)
