Chocolate Ripple Cake recipe
Ingredients
Choc Ripple Biscuits (Arnotts): 250g (1 packet)
Thickened cream: 300ml (for a lighter cake, 500ml for a more creamy cake)
Sugar: 1 tablespoon
Vanilla extract: 1 teaspoon
To serve
Fresh berries
Chocolate shavings
Method
Beat the cream, sugar and vanilla extract until it firms to stiff peaks (approximately 2 minutes)
Spread a thin layer of cream onto a serving plate. Smear a teaspoon of the cream onto the base of a biscuit and stand up right on the cream on the serving plate.
Repeat this process and continue to add biscuits onto the previous biscuit until you complete a log.
You should be able to do this until all the biscuits have been used.
Spread the remaining cream over the biscuit log.
Let it rest in the fridge for at least 6 hours, ideally for 18+ hours. This will allow the biscuits to absorb the moisture and take a cake like consistency.
To serve, slice on the diagonal and top with fresh berries and/or chocolate shavings (to make the shavings, use a vegetable peeler to scrape shavings off a block of chocolate).
Variations
There are many variation for this classic cake. Consider the following:
Biscuits: Replace the choc ripple biscuits with butternut snap biscuits
Infuse biscuits with flavours: Briefly dip biscuits into a espresso or liquor before spreading with cream. Liquor that works well includes baileys or butterscotch schnaps
Infuse cream with flavours: Consider adding a few tablespoons of cocoa powder to the cream once it has been whipped.
Topping: Fresh berries or chocolate shavings work well
