Chicken Risoni Bake
One tray meal that can feed a family. Something that you can set the ingredients in the tray and bake it. This gives you the opportunity to clean up, prepare side dishes or whatever is needed around the house.Â
Chicken Risoni Bake Recipe
Ingredients
Chicken thigh, skin on: ~500g
Risoni: 2 cups
Zucchini: 1, sliced
Onion, brown: 1 diced
Bacon, streaky: 200g, diced
Chicken stock: 1 1/2 cup
Cream: 1/2 cup
Oregano: Small handful
Brown mushroom: 200g, sliced
Olive oil
Salt and pepper to taste
Method
Pre-heat oven to 200C fan forced.
Fry the bacon and set aside. Fry the onion in the bacon oil until soft, then add the zucchini and mushroom.
Place mixture into oven dish and place chicken thigh on top. Brush with olive oil and sprinkle with some fresh oregano and bake for 10 minutes.
In the meantime, mix the cream, chicken stock and risoni in a bowl.
Once the tray has been baking for 10 minutes, take it out, and add the risoni mixture in the centre of the tray, ensuring that all of the risoni is in the liquid mixture. If not, it will leave hard undercooked risoni granules.
Bake for another 20 minutes.
