Caprese Skewers

These Caprese Skewers are delightfully fresh, colourful, and bursting with flavour. Juicy cherry tomatoes, fragrant basil leaves, and creamy cherry bocconcini are threaded onto skewers and finished with a balsamic glaze—creating the perfect bite-sized appetiser.

Caprese Skewers recipe
Ingredients
200 g cherry bocconcini or mini mozzarella balls
200 g cherry tomatoes
1 bunch fresh basil leaves
2 tbsp balsamic glaze (or good quality balsamic vinegar)
Extra virgin olive oil (optional drizzle)
Sea salt flakes (to taste)
Freshly ground black pepper (optional, to taste)

Method
Drain the cherry bocconcini and pat dry. Slice each bocconcini ball in half.
Wash and dry cherry tomatoes and basil leaves. Slice cherry tomatoes in half.
Thread onto skewers in the following order: cherry tomato half, basil leaf, bocconcini half, cherry tomato half, another basil leaf, and finish with another bocconcini half.
Arrange skewers neatly on a serving platter.
Just before serving, season lightly with sea salt flakes and freshly ground black pepper. Drizzle with balsamic glaze and a light drizzle of olive oil, if desired.
