Burrata and prosciutto salad
One of my wife's signature dishes. When she helps prepare me prepare for a dinner with friends, there is a decent chance that it's either a dessert or this salad.

Burrata: 1 medium sized burrata cheese
Rocket: ~2 cups
Basil: ~1 cup
Tomatoes: ~2 cupsÂ
Prosciutto: ~1 cup or so
Balsamic vinegar glaze
Method
Method
Wash the basil, rocket and tomato as required.
Cut tomatoes to the desired size. I would typically use smaller tomatoes and halve them.
Arrange all of the ingredients on a serving platter, starting with the rocket as a base, adding basil leaves, tomatoes, loosely rolled florets of prosciutto and finally topping it with the burrata.
Drizzle balsamic vinegar glaze over the top as desired.
