There’s nothing quite like the satisfying crunch of homemade biscotti, the ultimate pairing for your morning coffee or evening tea.
This classic Italian cookie is surprisingly easy to make and perfect for gifting, entertaining, or indulging.
Biscotti recipe
Ingredients
Flour: 2 cups
Butter: 110g
Sugar: 1 cup
Eggs: 2
Baking powder: 1 1/2 teaspoon
Vanilla extract: 2 teaspoon
Salt, table: 1/2 teaspoon
Pistachios: 1/2 cup
Blanched almonds: 1/2 cup
Cardamon, ground: 1 teaspoon
Method
Cream butter and sugar, add eggs, vanilla extract.
Mix flour, baking powder and salt. Fold into butter mixture.
Line two baking trays and separate the batter into three three logs with a diameter of about 8 - 10 cm.
Cool in fridge for 30 mins.
Meanwhile, preheat an oven to 180C fan forced.
Bake for 30 minutes or until browned.
Take the biscotti out of the oven and slice into pieces on the diagonal, about 3/4 cm thick. Lay the biscotti back onto the lined baking tray.
Bake for a further 15 min or until lightly browned.
